Banana Nut Muffins

As always when my friends are in town we get a bit creative. This time around I had so many ripe bananas that were going to go bad before I could get to them. So of course my friends and I decided to try a new recipe.






















For this recipe you will need the following:
2 cups all purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/2 cup chopped pecans (optional)
1 teaspoon salt
2 large eggs, beaten
11/2 cups mashed bananas (about 3 medium bananas)











Instructions:
1. Position the rack in the center of the oven and preheat to 375 degrees F.
2. Grease the pan or use paper liners.
3. In a large bowl, blend together the flour, sugar, baking soda, pecans (we substituted pecans for walnuts), and salt.
4. In a medium bowl, beat together the eggs and bananas.
5. Combine the two mixes, blending until the dry ingredients are moistened.
6. Spoon the batter in the prepared muffin cups about 23/4 full.
7. Bake for 12 to 18 minutes or until the tops are golden brown.
8. Tip: Use a toothpick to test the centers. If the toothpick comes out clean, they are ready!
9. Let cool for about 5 to 7 minutes.




Voila! Banana nut muffins! We had so much fun baking these. Not to mention how deelish they were and a great pairing  for our wine (lol). As always you could not go wrong with Organic ingredients.
