Pumpkin Carving Success

So it turns out the party was a hit! Wistfully not as many guest attended this year as there were a few people traveling. Nevertheless, the carving must go on. For those little monsters that did make it we had a truly enjoyable time! With a party filled of candy, sweets, and more sweets, not even the adults resisted. It was entertaining to watch the kids begin the carving and the parents finish, the outcome of some amazing pumpkins.


 The menu consisted of plenty of sweets such as cupcakes, caramel popcorn, donuts, cotton candy, cookies, and of course all kinds of candy and chocolate. Hey it's once a year right? We also served fruit skewers, meat empanadas, pigs in a blanket, PB&J sandwiches, goldfish cups and everyone's favorite, Pizza! (Andiamo! Best BBQ chicken pizza ever!) Lots of much needed water for those tasty sweets! As well as coconut water, apple and fruit punch honest juice for the kiddies. In addition, naturally and most expected WINE for the grown ups!

Party Prep

 Next weekend we will be hosting our annual pumpkin carving party. Sooo the stress is on….






Party planning is one of my talents, I must say. I fully enjoy every part of it. Even though every party is fun to plan, kid parties are the best! Everything just seems to be a bit more exciting from deciding on the theme to decorations to the activities. Love to see the happy faces at the conclusion of all the hard work. Yes, even the smallest of parties require work.





I tend to be a perfectionist when it comes to this skill of mine. This year I started a bit late and being the spaz that my BF calls me I almost flipped out lol. However now  that I began, everything seems to be falling right into place.








 

Excited to see what creations will the little ones carve up this year. Not to mention that I cannot wait to see them in all those cute little costumes. J and I decided to get matching costumes this year. FUN! Invites have been sent out. (aren't they the cutest, DIY) Just a few more things to go perishable food to buy and the party is on!

Banana Nut Muffins

As always when my friends are in town we get a bit creative. This time around I had so many ripe bananas that were going to go bad before I could get to them. So of course my friends and I decided to try a new recipe.






















For this recipe you will need the following:
2 cups all purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/2 cup chopped pecans (optional)
1 teaspoon salt
2 large eggs, beaten
11/2 cups mashed bananas (about 3 medium bananas)











Instructions:
1. Position the rack in the center of the oven and preheat to 375 degrees F.
2. Grease the pan or use paper liners.
3. In a large bowl, blend together the flour, sugar, baking soda, pecans (we substituted pecans for walnuts), and salt.
4. In a medium bowl, beat together the eggs and bananas.
5. Combine the two mixes, blending until the dry ingredients are moistened.
6. Spoon the batter in the prepared muffin cups about 23/4 full.
7. Bake for 12 to 18 minutes or until the tops are golden brown.
8. Tip: Use a toothpick to test the centers. If the toothpick comes out clean, they are ready!
9. Let cool for about 5 to 7 minutes.




Voila! Banana nut muffins! We had so much fun baking these. Not to mention how deelish they were and a great pairing  for our wine (lol). As always you could not go wrong with Organic ingredients.

My Birthday

This year Oct.2 was not the typical Hoorah Birthday, fancy trip, nor the pricey gifts, rather it was a priceless one. BF, family, close friends (flew in from Virginia), and the rest of my closest and dearest friends all coming together to celebrate with a small gathering and fun outings. I must say this was one of the most meaningful birthdays.







We all like the material things, however I feel that as we get older priorities shift. Now there is nothing like all the people you love leaving their busy lives to come celebrate your one special day.






Yes, this was the big three-one. Very grateful for this year but not so excited about turning 31 but quickly changed that negative into a positive. There is one thing that I want to pursuit and that is to be a woman that wears many hats in her life. I have decided that this will be the year that I will begin to make it happen. 32 will be an astonishing year!







I want to thank all my friends for truly making this one special! Love you all <3 !!!!!! Happy 31st to me!!!!
P.S . Chocolate cake was to die for!!!

Yogis...

There's nothing like Saturday morning yoga. One of the great ways to relax the mind, body, and spirit. There is no limit to what you can create when you set your mind to it, your body is limitless.
I practice my yoga at http://www.bayfrontparkmiami.com/pages/yoga/html, and what a beautiful atmosphere it is. Classes are held Mon. & Wed. at 6pm and Saturday Mornings at 9am. I love this friendly outdoor location right next to the water where the breeze runs through and invigorates your body and mind.

Yoga is a practice for everyone in my family, even for J the little yogi. It is amazing and I would recommend for everybody to try it. Yoga makes me feel happy……
Life is all about butterflies and rainbows. Don't let anybody tell you otherwise.

Crafternoons….

When my two good friends Lidia and Adriana were in town they taught me about Crafternoons. Being the wine-o that I am, I just loved the idea. Crafternoons: An afternoon of arts and crafts while enjoying  some good wine. Genius (LOL)!



So what a perfect moment to have them create the art wall I've been wanting in J's room. J loves arts and crafts and some of her favorites are drawing, painting, and coloring. Therefore, I wanted something where we can display her little art work.












Thank you so much girls! What a great time it was and what beautiful art work you girls created. Loved it and most important so did J. You girls sure can put style on anything. Cannot wait and already planning the next Crafternoon.

Cupcakes by J





Today was cupcake day for J and I. Well, its more like for J. I have been teaching and helping her since she was 3 years old, and now she bakes them all on her own (tears of joy). Kids grow up so fast…. These days  I just get stuck with the cleaning (LOL) and of course the yummy eating part too.


 I bought the cutest cupcake wrappers and toppers from Sur La Table. They are polka dot and stripe pin wheels perfect for any occasion or just for fun as they were used today. Only $1.99 each on sale!




 Baking is one of my favorite leisure activities and now so happy that it is also becoming one of Js. Cupcake baking is a fun and entertaining activity for you and your kids. For you patient parents out there.

Dinner Tonight

I really fell in love with this dish and I wanted to share it. This recipe was introduce to me by Erika, my BF's sister and it is ohhh so yummy and easy to make.

Bok Choy Salad



Ingredients:
1/2 olive oil
1/4 cup white vinegar
1/3 cup white sugar
3 table spoons soy sauce
2 bunches baby bok choy, cleaned and sliced
1 bunch green onions, chopped
1/8 cup, slivered almonds, toasted
1/2 (6 ounce) package chow mein noodles



Directions:
1. In a glass jar with a lid, mix together olive oil, white vinegar, sugar, and soy sauce. Close the lid and shake until well mixed.

2. Combine the bok choy, green onions, almonds, and chow mein noodles in a salad bowl. Toss with dressing, and serve.








When Erika prepared this dish she made some substitutions. She used Soba noodles instead of chow mein and seasoned rice wine vinegar instead of white. Creating this Bok Choy salad to be more delish. You must try it, obsession guaranteed.
